Some information about peppers

  • Origin

Peppers are native from the tropical regions of Latin America. Nowadays, peppers can be cultivated in the Netherlands, Greece, Israel, Spain or Morocco.

Pepper is one of the first cultivated crops in the world. The current vegetable comes from a variety of wild pepper, which was already known around 5000 years BC.

  • Coloring and taste

When pepper fruits mature on the plant, their color change. It can pass from green to yellow, orange or red (in our case). This color change is due to the carotenoid content of the fruits.

This carotenoid concentration increases with the degree of maturity. It is for this reason that the carotenoid content is higher in red peppers. These colors give a beautiful aesthetic effect, with a very varied color palette. All these colors not only serve the aesthetic, but also affect the taste: red pepper is sweet, the yellow one is  juicy and tender, and  the green pepper and bitter.

  • Carotenoids

Carotenoids are very present in peppers. It is said that one slice of red pepper contains about one-third of the recommended daily carotenoid intake. It is also well known that they have a preventive effect against cancer. For example, researches published in 2009 in the International Journal of Cancer show that women close to menopause who consume two or more carotenoid-rich meals a day reduced their risk of breast cancer by 17%.
